CHICKEN PAKORA RECIPE




Ingredients:




500 gm Boneless Chicken Pieces
2 tbsp Oil
1 tsp Ground Cumin
1 1/2 tsp Salt
1-2 each Chopped Green Chillies (Jalapeno)
1 Chopped Onion
1 tsp Ginger-Garlic paste
2 tsp Vinegar
1 cup Curd
1 tsp Lemon juice

Preparation:

  • Put everything but chicken and batter in blender and blend till fine
  • Marinate the chicken pcs with the resulting mixture
  • Keep in the fridge for 40 minutes.
  • Put chicken in batter
  • Deep fry it until its colour changes to golden brown Condiments
  • Serve the chicken pakora with coriander ormint chutney or tomato ketchup

Smoked seer fish cakes, poached egg and spinach


INGREADENTS

100 g    Smoked Seer Fish
100 g    Potatoes
20   g    Parsley
50   g   White bread crumbs
2 no    Eggs
50 g   Spinach






METHORD

  • Smoked the Seer fish, allow to cool
  • Boil the potatoes, mash and mixed with flaked fish
  • Make a cutlet, crumb it
  • Heat the butter and oil together
  • Shallow fry the cutlet.
  • Make a poach egg
  • Sauté the spinach.





Presentation

  • Arrange the cake on the middle of the plate.
  • Place the sauté spinach on the top
  • And poached egg on the top.

How to Bake a Tuna Mornay


Things You'll Need:
  • 2 large tins tuna {400 grams and over}
  • 1 large bag pasta. I used almost an entire bag of 735 gs of large shell pasta
  • 120 grams butter
  • 8 tablespoons plain flour
  • 870 mls milk
  • 1 and a 1/2 cans peas and corn mix {or 4 cups frozen vegies}
  • 5 large potatoes
  • 1 cup shredded cheese
  • Oven
  • Large stew or casserole pot, or large ramekin

Put peeled and chopped potatoes and pasta on to cook {in separate pots, obviously!}. I use boiled water from the kettle, as it cuts cooking time. I estimate the potatoes at 25 minutes to cook, pasta at about 15.

While the potatoes and pasta is cooking, drain cans of tuna and vegetables. If you're using fresh or frozen vegetables, cook them as you are used to.

Melt butter in pot on medium-low heat until bubbling. Turn down heat and add flour and cook, stirring, until mixture bubbles. Remove from heat and whisk in milk gradually until smooth. Place the pot over medium-high heat. Cook, stirring, until mixture thickens.
This may seem like it's taking forever, but once the thickening process starts, it is so easy to burn unless tended carefully.

Your pasta should be cooked by now, so pour it into the bottom of the casserole pot, giant ramekin or stew pot. I usually fill my container up to the 1/4 level, and you can always add more later.
Prepare your potatoes like a mash, then set aside.

Add tuna to thick creamy mixture {break it up a little with a fork in the in if you need to}, and vegetables. Stir, cooking, on low heat for about 5 minutes until all combined.

Pour into pot on top of pasta, and mix well. There should be enough sauce to cover the pasta, add more or less as you please.
You should have a gap of about 1 to 2 inches left until the top of the pot.

Evenly spread potato mash on top of mornay. Sprinkle liberally with cheese and bake at 200 degrees C for 10 minutes, or until golden brown on top.

How to Make Italian-Style Beef & Potato Casserole
(Serves 8)
  • 1½ lbs (675g) of ground beef
  • 1 medium onion
  • 1 stalk of celery
  • 2 medium carrots
  • 3 medium cloves of garlic
  • 2 6oz (175ml) tins of tomato paste
  • 18oz (525ml) of water
  • 1 tsp of dried basil
  • 1 tsp of dried oregano
  • 1 tsp of paprika
  • ¼ tsp of black pepper
  • 3 lb (1350g) of potatoes
  • 1 cup (4oz / 120g) of shredded cheese
  • 1 cup (4oz / 120g) of breadcrumbs
  • 1 tsp mixed herbs
  • ½ tsp of garlic powder
  • 4 tbsp (60g) of Parmesan
Directions:
  1. You will require a food processor, grinder or a grater, a potato peeler, a sturdy knife, a slotted spoon, a large skillet or frying pan, a large pot and a 9x13” (225x325mm) casserole dish.
  2. If you are using a food processor or grinder/blender, cut the carrots, celery, onion and garlic into medium to small pieces and puree them all together. Otherwise, grate the carrots and the celery. Finely dice the onion and thinly slice the garlic. Combine these ingredients together in a bowl and set on one side.
Peel the potatoes (unless already industrially washed and thoroughly clean) and thinly slice them. The slicing blade on a food processor is ideal for this; otherwise, use the slicing blade that most modern graters have (be careful not to cut yourself - the blade can be very sharp). The slices should ideally be as thin as potato chips or crisps. As a last but rather laborious resort, you can use a vegetable peeler to create very thin slices

How to Make Real Ceasar Salad Dressing


Have you noticed that everything comes in a bottle these days? I have to go to a fine-dining restaurant to get a 'real' Ceasar Salad--and even then sometimes I wonder. I actually recall waiters making the dressing at the table. Here are the steps to make real honest-to-goodness, Ceasar Salad.

Things You'll Need:
  • 1/2 cup of vegetable oil
  • 1 egg (yes, raw)
  • 2-3 tbsp. of lemon juice
  • Anchovy paste
  • Salt/Pepper
  • 2 tsp. minced garlic
  • Worcestershire sauce
  • 1 cup Parmesan cheese
  • bunch of green lettuce
  • croutons

In a medium bowl, mix together the oil and egg with fork.

Add in the lemon juice--start with 2 tablespoons, add more later (once fully mixed) to taste.

Mix in the minced garlic and shake in 2-3 "shakes" of Worcestershire sauce.

Take the anchovy paste and squeeze about 3 inches of paste into the bowl. Mix well with a fork until smooth.

Add Parmesan cheese. Mix again. Salt/Pepper to taste.

Spicy Indian Vegetable curry


Things You'll Need:
  •  IMustard seeds,
  •  Onion (Finely chopped),
  • Ginger and Garlic (Chopped),
  • Tomato (Chopped),
  •  Yogurt,
  •  Coconut milk
  •  Oil.
  • Any vegetable Potato / Mushroom / Capsicum /

Make the curry
Pour 3 tablespoons of oil in a pan and heat and add mustard seeds, curry leaves to it. Add the chopped garlic and ginger and fry it. You can add the cloves, cinnamom and cardamom (one or two each) if you have. Add the chopped onion and fry until it turns golden brown (10 min). Now, add the tomato and fry till the oil separates out of the mixture (10 min). Add your favorite vegetable or meat here to make your favorite curry. The quantity of curry depends on the number of onions and tomatoes. So, choose the number based on the need.

Then, add Turmeric powder, Chilli powder, Coriander powder (You will find these in Indian stores) and salt. Add the Chilli powder in small quantities and you can add more if required. Now add either 2 spoons of Coconut milk or Yogurt (even both). Add 1/2 cup of water and stir. Close the lid for few minutes and let it boil in simmer heat for 15 minutes. Check once in 5 minutes and stir. The water will evaporate as the vegetables cook. Some vegetables like Potato may need a hard boil - so, I microwave it for 10 minutes before I add it to the curry.


In 15 minutes, you should see a thick gravy in the pan. If not, do not blame me. Even I didn't get it right for the first few attempts. Garnish it with chopped coriander leaves. That's all.
You can have this veg curry with steamed rice or chapatti / bread

CHRISMAS CAKE




Ensure this cake is made 3 weeks before Christmas, and then ice one week before the occasion.
Ingredients
12 oz plain flour
1 tsp. cinnamon
1 tsp. mixed spice
½ tsp. salt
4 oz candied peel
4 oz cherries
2 lb. Dried fruit ( sutana,plams,rasins )
4 oz blanched almonds
4 eggs
4 tbsp. sherry
Finely grated 1 lemon
8 oz margarine
8 oz sugar
1 tbsp. black treacle
 Sieve together all the dry ingredients.
 Mix the peel, fruit, cherries, chopped almonds and lemon rind.
 Whisk the eggs and sherry together.
 Cream the margarine, sugar and black treacle until soft.
 Add the flour and egg mixtures alternately to the margarine.
 Stir in the fruit mixture.
 Put into an 8-9 inch tin, lined with greaseproof paper round the sides and at the bottom. Tie a double band of brown paper round the outside of the rim, standing well up above the top of it.
 Put in the middle of a hot oven. Bake for 31/4-31/2 hours atgas mark 3 for the first 11/2 hours, and then decrease to gas mark 2 for the remainder.
 Cool the cake in the tin, then store in an airtight container.
